Finally processed the dark red beets

It’s always best to process your veggies the same day you pick them, for peak freshness. But it took me a week to get around to finishing this year’s Beet Project.

The Detroit Dark Red beets got pickled today. I water bath canned 5 large jars, some sliced, some diced, some little ones whole. And when I got tired of slicing, I made up two jars of small wholes in a light brine for the refrigerator. Beautiful and Done!
