Asparagus time!

We almost missed the asparagus harvest window with our little trip to Oregon and Idaho! It takes a few years for an asparagus bed to really mature. We didn’t harvest any the first year or last year, but this year we decided to do it. It’s very short window of time in which to grab the stalks before they go to seed, but it’s really special to get something so yummy out of the garden before anything else is even awake!

The green variety on the right has grown more abundantly and faster than the purple on the left. We will have to see if the purple ever catches up. The asparagus patch is a zero-maintenance corner of the garden by the greenhouse, no irrigation or attention needed the rest of the year.
