Harvest lunch

This year I tried to only plant things (and quantities) that we will actually eat. Beets are definitely on that list. I accidentally harvested one of the beets while I was checking on the plants. So what do you do with one beet? Boil and quick pickle it, add it to some of the garden lettuce greens, and boom, you have a tasty beet salad for lunch!
